Crock Pot mushrooms

If you love mushrooms you have to try this recipe. Very, very simple to make. I use white button mushrooms. Butter "not margarine". And 1 pkg. of dry Ranch dressing mix.
The recipe I use calls for 1 stick of butter and 1 pkg of dressing mix per 16 oz. of mushrooms. I use a medium size crock pot. Basically, 2 lbs of mushrooms fills it to the top. It looks like a lot but don't worry the mushrooms will shrink down. Melt the butter in a bowl in the microwave. 2 sticks of butter only takes about 60 seconds. Add the dressing mix to the melted butter and stir. Pour over the mushrooms and set crock pot on low. Cook for about 4 hrs. About half way through, as the mushrooms cook down and everything is hot, stir them gently and bring up some of the melted butter from the bottom and pour over the top.
You can serve them with rice or Teriyaki noodles.

Load the crock pot with mushrooms.

Ranch dressing mix and real butter.

Melt the butter and stir in dressing mix.

Pour melted butter mix over the mushrooms.

Cooking in the buttery mix. Almost done.

Stuffed Portobello Mushrooms

8 large portobello mushrooms
1 Tbs olive oil
2 red bell peppers, seeded and finely chopped
2 green bell peppers, seeded and finely chopped
1 large onion finely chopped
3 scallions (spring onions), green and white parts, thinly sliced
5 to 8 cloves of garlic, finely chopped, to taste
1/2 tsp oregano
1/2 tsp dried basil
1/2 tsp thyme
salt and pepper to taste
6 ounces mozzerella cheese

Remove the stems from the mushrooms, chop and reserve. Place the whole mushroom caps smooth side down on a lightly greased baking sheet and bake in a preheated 425 F. oven for 15 minutes. Meanwhile, heat the oil in a skillet over moderate heat and saute the mushroom stems, bell peppers, onions, scallions, and garlic until tender, 8 to 10 minutes. Add the herbs and cook an additional 2 minutes. Spoon the vegetable mixture into the mushroom caps and top with the cheese. Bake an additional 10 minutes or until the mushrooms are tender and the cheese has melted. Serves: 4 (2 mushrooms per person).
